It is recipe Thursday and here’s a family recipe from Marcos, our maintenance account supervisor.
4 – Tomatoe’s chopped
2 – Avocado’s cut in half, take pit out and save. Cutavocado in cubes (in the skin) and then use spoon to scoop out cubes and placein a separate bowl.
1- Bunch of cilantro, chopped from stem up so you do not crush the leaves
1 – Sweet Vidalia onion chopped
2 – Cloves of garlic minced
1 – Lime squeezed for fresh juice
Jalapeno’s chopped to taste. (Marcos likes to use one jalapeno for eachtomato, use according to how spicy you like it!)
Garlic salt to taste
In a bowl:
Mix chopped tomatoes, onion and jalapeno –stir well
Add chopped cilantro and minced garlic –stir well
Sprinkle garlic salt to taste – stir well
Add fresh squeezed lime juice – stir well
Add cubed avocado – stir well
Add one avocado pit to keep it fresh – (so it doesn’t turn brown)
Serve with your favorite tortilla chips and enjoy!
